Ingredients

3 lbs whole chicken
2 large carrots, sliced
2 celery stalks, chopped
1 large onion, chopped
3 cloves garlic, minced
8 cups chicken broth
1 bay leaf
1/2 tsp dried thyme
Salt and pepper to taste
1 tbsp olive oil

Instructions

1. Season the chicken with salt and pepper.
2. In a skillet, heat olive oil over medium heat and brown the chicken on all sides.
3. Transfer the chicken to the slow cooker, adding carrots, celery, onion, and garlic.
4. Pour chicken broth over the ingredients, add the bay leaf and thyme.
5. Cover and cook on low for 6-8 hours, or until chicken is tender.
6. Remove the chicken, shred it, and discard bones. Return shredded chicken to the pot.
7. Season with additional salt and pepper to taste before serving.

Storage

Cool soup completely, then store in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.

Reheating

Reheat the soup on the stovetop over medium heat until hot, stirring occasionally. Alternatively, reheat in the microwave until warmed through.
