Ingredients
2 lbs beef chuck roast
1 lb baby potatoes, halved
4 carrots, sliced
1 large onion, chopped
3 cloves garlic, minced
4 cups beef broth
2 tbsp tomato paste
2 tbsp Worcestershire sauce
1 tbsp dried thyme
1 tsp salt
1/2 tsp black pepper
2 bay leaves
1 cup frozen peas
Instructions
1. Cut beef chuck roast into 1-inch cubes and season with salt and pepper.
2. In a crockpot, place beef, potatoes, carrots, and onion.
3. Add minced garlic, beef broth, tomato paste, Worcestershire sauce, thyme, salt, pepper, and bay leaves.
4. Stir to combine, ensuring beef and vegetables are submerged in broth.
5. Cover and cook on low for 8 hours or until beef is tender.
6. Remove bay leaves and stir in frozen peas. Cook for an additional 30 minutes.
7. Serve hot, garnished with fresh herbs if desired.
Storage
Store cooled stew in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a saucepan over medium heat until warmed through, or microwave on high for 3-4 minutes stirring halfway.
