Hearty Harvest Vegetable Soup

Ingredients
1 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
2 carrots, sliced
2 stalks celery, diced
1 large sweet potato, peeled and cubed
1 zucchini, sliced
1 bell pepper, chopped
1 (14.5 oz) can diced tomatoes
6 cups vegetable broth
1 cup kale, chopped
1 tbsp fresh thyme
1 tsp ground cumin
1/2 tsp smoked paprika
Salt and pepper to taste
Instructions
1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until onions are translucent.
2. Stir in carrots, celery, sweet potato, zucchini, and bell pepper, cook for 5-7 minutes until vegetables start to soften.
3. Add diced tomatoes, vegetable broth, thyme, cumin, and smoked paprika, bring to a boil.
4. Reduce heat, cover, and let simmer for 20-25 minutes or until vegetables are tender.
5. Stir in kale, season with salt and pepper, cook for an additional 5 minutes.
6. Serve hot, garnish with additional fresh thyme if desired.
Storage
Allow the soup to cool completely before transferring it to airtight containers. Store in the refrigerator for up to 5 days.
Reheating
Reheat gently on the stovetop over medium heat until warmed through. Stir occasionally. Alternatively, reheat individual portions in the microwave until hot.
