Hearty Harvest Slow Cooker Beef Stew

Ingredients

2 lbs beef chuck, cubed
1/4 cup all-purpose flour
1 lb potatoes, peeled and diced
4 carrots, sliced
2 parsnips, sliced
1 large onion, chopped
3 cloves garlic, minced
2 cups beef broth
1 cup red wine
2 tbsp tomato paste
1 tbsp Worcestershire sauce
2 tsp dried thyme
2 tsp dried rosemary
1 bay leaf
Salt to taste
Pepper to taste
2 tbsp olive oil

Instructions

1. Coat the beef cubes in flour, shaking off any excess.
2. In a skillet, heat olive oil over medium-high heat and brown the beef on all sides. Transfer to slow cooker.
3. Add potatoes, carrots, parsnips, and onion to the slow cooker.
4. In a bowl, mix beef broth, red wine, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour over the beef and vegetables.
5. Add the bay leaf, cover, and cook on low for 8 hours or until beef is tender.
6. Remove bay leaf before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stove over medium heat, stirring occasionally, until warmed through.
