Ingredients
1 pound dried white beans
8 cups water
1 meaty ham bone
1 tablespoon olive oil
2 cups chopped onions
1 cup diced carrots
1 cup diced celery
3 cloves garlic, minced
1 bay leaf
1 teaspoon dried thyme
1/2 teaspoon black pepper
Salt to taste
Instructions
1. Rinse and sort the dried white beans, then soak them overnight in a large bowl of water.
2. Drain and rinse the beans, then add them to the slow cooker along with 8 cups of fresh water and the ham bone.
3. Heat olive oil in a skillet over medium heat, then sauté the onions, carrots, and celery until tender, about 5 minutes.
4. Add minced garlic to the skillet and cook for an additional minute.
5. Transfer the sautéed vegetables to the slow cooker.
6. Add the bay leaf, dried thyme, and black pepper to the slow cooker.
7. Cover and cook on low for 8-10 hours until the beans are tender and the flavors have melded.
8. Remove the ham bone, shred any meat off the bone, and return the meat to the stew.
9. Season with salt to taste, then stir well before serving.
Storage
Store in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat on the stove over medium heat until warmed through, or microwave in a microwave-safe bowl.
