Hearty Ham and Bean Delight

Ingredients
1 lb smoked ham hock
2 cups diced cooked ham
2 tbsp olive oil
1 large onion, chopped
2 carrots, diced
2 stalks celery, sliced
4 cloves garlic, minced
1 tsp dried thyme
1 bay leaf
1/2 tsp black pepper
1/4 tsp cayenne pepper
8 cups chicken stock
2 cans (15 oz each) cannellini beans, drained and rinsed
1 can (15 oz) fire-roasted diced tomatoes
Salt to taste
1/4 cup fresh parsley, chopped
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté until soft, about 5 minutes.
2. Stir in garlic, thyme, bay leaf, black pepper, and cayenne pepper, and cook for another 2 minutes.
3. Add the chicken stock, ham hock, and diced tomatoes. Bring to a boil, then reduce heat and let simmer for 1 hour, stirring occasionally.
4. Remove ham hock and shred any meat. Return shredded meat to the pot along with diced ham and beans. Simmer for another 30 minutes.
5. Discard bay leaf, season with salt to taste, and stir in fresh parsley before serving.
Storage
Store leftover soup in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
Reheating
Reheat gently on the stove over medium heat until warmed through, or microwave in a microwave-safe bowl for 2-3 minutes, stirring halfway through.
