Hearty Goulash

Hearty Goulash is a comforting and flavorful stew that combines tender beef, vibrant vegetables, and aromatic spices, delivering a rich and warming meal perfect for cold evenings.

Ingredients

2 lbs beef chuck, cut into 1-inch cubes
2 tbsp vegetable oil
2 onions, chopped
3 cloves garlic, minced
2 bell peppers, chopped
4 cups beef broth
2 tbsp sweet paprika
1 tsp caraway seeds
2 tbsp tomato paste
1 bay leaf
Salt and pepper to taste
2 cups diced tomatoes
1/4 cup sour cream (optional)

Instructions

1. Heat the vegetable oil in a large pot over medium-high heat and brown the beef cubes on all sides.
2. Remove the beef and set aside. In the same pot, add onions and garlic. Sauté until onions are translucent.
3. Add the chopped bell peppers and sauté for an additional 5 minutes.
4. Stir in the paprika, caraway seeds, and tomato paste, and cook for 1 minute.
5. Return the beef to the pot, add the beef broth, diced tomatoes, bay leaf, salt, and pepper.
6. Bring to a boil, reduce heat to low, and simmer for about 1.5 hours or until the beef is tender.
7. Remove the bay leaf before serving, and garnish with sour cream if desired.

Storage

Store the goulash in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently in a pot over medium heat until heated through, or microwave individual portions.
