Hearty Country Ham and Bean Stew

Ingredients
1 lb smoked ham, diced
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, sliced
1 bay leaf
1 tbsp fresh thyme leaves
8 cups chicken broth
1 cup dried navy beans
1 cup dried kidney beans
1/2 tsp black pepper
Salt to taste
2 tbsp chopped parsley
Instructions
1. Soak the navy beans and kidney beans overnight in cold water.
2. Drain and rinse the beans.
3. In a large pot, heat olive oil over medium heat.
4. Add the onion and garlic, sauté until translucent.
5. Add carrots and celery, cook until they start to soften.
6. Stir in the diced ham and cook for a few minutes.
7. Add the soaked beans, bay leaf, thyme, and chicken broth to the pot.
8. Bring the mixture to a boil, then reduce heat and simmer for 1.5 to 2 hours until beans are tender.
9. Season with black pepper and salt to taste.
10. Remove bay leaf and stir in chopped parsley before serving.
Storage
Store leftover soup in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat in a saucepan over medium heat, stirring occasionally, until warmed through. Add a splash of water if the soup is too thick.
