2 celery stalks, sliced

1/2 teaspoon dried thyme
4 cups chicken broth
2 cups shredded cooked chicken
1 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon butter, melted
1/2 cup milk
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery; sauté until vegetables are softened.
2. Stir in salt, black pepper, and thyme; cook for 1 minute.
3. Add chicken broth and bring to a boil.
4. Reduce heat and stir in shredded chicken; simmer gently.
5. In a bowl, combine flour, baking powder, and 1/2 teaspoon salt.
6. Stir in melted butter and milk to form a soft dough.
7. Drop spoonfuls of dough into the simmering broth; cover and cook for 15 minutes until dumplings are fluffy.
8. Serve hot, garnished with fresh parsley if desired.
