Hearty Chicken Chili

Ingredients
2 tbsp olive oil
1 medium onion, chopped
3 cloves garlic, minced
1 lb chicken breast, cubed
2 tsp ground cumin
1 tsp dried oregano
1/2 tsp cayenne pepper
salt and pepper to taste
2 cans (15 oz each) cannellini beans, drained and rinsed
1 can (15 oz) corn kernels, drained
1 can (4 oz) diced green chilies
4 cups chicken broth
1/4 cup fresh cilantro, chopped
Juice of 1 lime
Sour cream and shredded cheese for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add the onion and garlic, and sauté until onions are translucent.
3. Add the chicken breast and cook until no longer pink.
4. Stir in the cumin, oregano, cayenne pepper, salt, and pepper.
5. Add the cannellini beans, corn, diced green chilies, and chicken broth.
6. Bring to a boil, then reduce heat and simmer for 30 minutes.
7. Stir in fresh cilantro and lime juice before serving.
8. Serve hot, garnished with sour cream and shredded cheese.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a pot over medium heat until warmed through, or microwave in a microwave-safe dish.
