Hearty Chicken Broth

Ingredients
4 lbs whole chicken
2 quarts water
2 large carrots, chopped
2 celery stalks, chopped
1 large onion, quartered
2 garlic cloves, minced
1 bay leaf
1 tsp salt
1/2 tsp pepper
1/4 cup fresh parsley, chopped
1 tsp thyme
Instructions
1. In a large stockpot, add chicken and water, bringing it to a boil. Skim off any foam.
2. Add carrots, celery, onion, garlic, bay leaf, salt, and pepper. Reduce heat and simmer for 1.5 hours.
3. Remove chicken, let it cool, then shred meat and discard bones.
4. Strain the broth, returning it to the pot with shredded chicken.
5. Stir in parsley and thyme, simmer for another 10 minutes.
6. Adjust seasoning to taste before serving.
Storage
Store cooled soup in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
Reheating
Reheat on the stovetop over medium heat until warm, stirring occasionally.
