Hearty Chicken and Vegetable Soup

Ingredients
1 tbsp olive oil
1 lb boneless skinless chicken breasts, diced
1 large onion, chopped
2 cloves garlic, minced
3 medium carrots, sliced
2 stalks celery, sliced
2 medium potatoes, diced
8 cups chicken broth
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
1 cup frozen peas
2 tbsp chopped fresh parsley
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add the diced chicken and cook until browned, about 5 minutes.
3. Remove the chicken and set aside.
4. In the same pot, add onion and garlic, sautéing until soft.
5. Stir in carrots, celery, and potatoes, cooking for another 5 minutes.
6. Pour in the chicken broth and add the dried thyme and rosemary.
7. Return the chicken to the pot and bring to a boil.
8. Reduce heat and simmer for 25 minutes or until vegetables are tender.
9. Add frozen peas and simmer for an additional 5 minutes.
10. Season with salt and pepper to taste.
11. Stir in fresh parsley before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently in a saucepan over medium heat until hot, or microwave on medium power until warmed through.
