Hearty Chicken and Mushroom Soup

Ingredients
1 lb boneless skinless chicken thighs
2 tbsp olive oil
1 cup diced yellow onion
2 cloves garlic, minced
8 oz mushrooms, sliced
4 cups chicken broth
1 cup water
2 carrots, chopped
2 stalks celery, chopped
1 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
1/2 cup heavy cream
1 tbsp fresh parsley, chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and minced garlic, sauté until translucent.
3. Stir in sliced mushrooms, cook for about 5 minutes until softened.
4. Add chicken thighs, cook until lightly browned on all sides.
5. Pour in chicken broth and water, bring to a boil.
6. Add chopped carrots, celery, thyme, salt, and pepper.
7. Reduce heat and simmer for 20 minutes.
8. Remove chicken, shred it, and return to the pot.
9. Stir in heavy cream, cook for an additional 5 minutes.
10. Garnish with fresh parsley before serving.
Storage
Store leftover soup in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat the soup gently on the stovetop over medium heat, stirring occasionally, until heated through.
