Hearty Chicken and Dumplings Soup

Ingredients

2 lbs chicken thighs
1 cup carrots, sliced
1 cup celery, chopped
1 onion, diced
4 cloves garlic, minced
8 cups chicken broth
2 cups flour
1 tbsp baking powder
1/2 tsp salt for dumplings
1 cup milk
2 tbsp butter, melted
1/4 cup fresh parsley, chopped
salt and pepper to taste

Instructions

1. In a large pot, cook the chicken thighs over medium heat until browned on all sides.
2. Remove chicken and set aside. In the same pot, add carrots, celery, onion, and garlic; sauté until vegetables are tender.
3. Return chicken to the pot and add chicken broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
4. In a bowl, mix flour, baking powder, and salt. Add milk and melted butter, stirring until a dough forms.
5. Drop spoonfuls of dough into the simmering soup. Cover and cook for another 20 minutes until dumplings are fluffy and cooked through.
6. Stir in parsley, salt, and pepper. Serve hot.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a pot over medium heat until warmed through, or in a microwave-safe bowl for 2-3 minutes.
