Ingredients

1 medium head of cabbage, chopped
2 tablespoons olive oil
1 large onion, chopped
3 carrots, sliced
3 cloves garlic, minced
8 cups vegetable broth
2 large potatoes, peeled and diced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 bay leaf
2 tablespoons fresh parsley, chopped

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and garlic; sauté until translucent.
3. Stir in carrots and potatoes, cooking for 5 minutes.
4. Add chopped cabbage and continue to sauté for another 5 minutes.
5. Pour in vegetable broth and bring to a boil.
6. Add salt, pepper, thyme, and bay leaf.
7. Reduce heat and let simmer for 30 minutes, stirring occasionally.
8. Remove bay leaf and stir in fresh parsley before serving.
