Hearty Cabbage and Sausage Stew

Ingredients

1 lb sausage links, sliced
1 head green cabbage, chopped
1 large onion, diced
2 carrots, sliced
2 celery stalks, sliced
3 cloves garlic, minced
6 cups chicken broth
1 can (14.5 oz) diced tomatoes
2 tbsp olive oil
1 tsp thyme
1 tsp salt
1/2 tsp black pepper
1 bay leaf

Instructions

1. Heat olive oil in a skillet over medium heat and brown the sausage slices. Transfer to slow cooker.
2. In the same skillet, sauté onion, carrots, celery, and garlic until soft. Add to slow cooker.
3. Add cabbage, chicken broth, diced tomatoes, thyme, salt, pepper, and bay leaf to the slow cooker.
4. Stir ingredients to combine and cover with lid.
5. Cook on low for 6-8 hours or on high for 3-4 hours until vegetables are tender.
6. Remove bay leaf before serving.

Storage

Store cooled stew in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat stew on the stovetop over medium heat until heated through, or in the microwave on high for 2-3 minutes, stirring halfway through.
