Hearty Cabbage and Beef Soup

A hearty and traditional cabbage and beef soup that warms the soul with tender beef, fresh vegetables, and a rich broth.

Serves: 6

Ingredients

1 lb ground beef
1/2 head of cabbage, chopped
1 large onion, chopped
2 cloves garlic, minced
3 carrots, sliced
3 stalks celery, chopped
1 can (14.5 oz) diced tomatoes
6 cups beef broth
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1 bay leaf
2 tbsp parsley, chopped for garnish

Instructions

1. In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned.
2. Remove the beef with a slotted spoon and set aside. Add the onion, garlic, carrots, and celery to the pot and sauté until softened.
3. Stir in the chopped cabbage and cook for another 5 minutes.
4. Return the beef to the pot and add the diced tomatoes, beef broth, salt, pepper, paprika, and bay leaf.
5. Bring to a boil, then reduce heat and simmer for 45 minutes until vegetables are tender.
6. Remove bay leaf, adjust seasoning if needed, and serve hot with a sprinkle of fresh parsley.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stovetop over medium heat until warmed through, or in the microwave for 2-3 minutes.
