Ingredients

4 lbs beef short ribs
2 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
2 cups beef broth
1 cup red wine
2 tbsp tomato paste
2 tbsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
2 sprigs fresh thyme
2 bay leaves

Instructions

1. Heat the olive oil in a large skillet over medium-high heat.
2. Brown the short ribs on all sides, then transfer to the slow cooker.
3. In the same skillet, add onions and garlic, sautéing until translucent.
4. Stir in the tomato paste, beef broth, red wine, Worcestershire sauce, salt, and pepper.
5. Pour the mixture over the ribs in the slow cooker.
6. Add thyme and bay leaves.
7. Cover and cook on low for 8 hours or until the meat is tender and falling off the bone.
8. Remove herbs before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a pot over medium heat until warmed through, or in a microwave-safe dish on medium power.
