Hearty Beef Casserole

Ingredients

2 lbs beef chuck, cut into 1-inch cubes
2 tbsp vegetable oil
1 large onion, chopped
3 cloves garlic, minced
2 carrots, sliced
2 potatoes, diced
1 cup beef broth
1 tbsp tomato paste
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
1/4 cup all-purpose flour
1 cup peas
1 bay leaf

Instructions

1. Preheat the oven to 325°F.
2. In a large ovenproof pot, heat the vegetable oil over medium-high heat. Brown the beef cubes in batches, setting them aside once browned.
3. In the same pot, add the onion and garlic, sautéing until the onion becomes translucent.
4. Stir in the flour until fully combined with the onion and garlic, cooking for about 1 minute.
5. Slowly add the beef broth, stirring continuously to avoid lumps.
6. Add the tomato paste, thyme, rosemary, bay leaf, salt, and pepper. Stir well.
7. Return the beef to the pot, along with carrots, potatoes, and peas. Stir to combine.
8. Cover the pot and transfer it to the oven. Cook for 2 hours, or until the beef is tender and the sauce has thickened.
9. Remove from the oven, discard the bay leaf, and let it rest for 10 minutes before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a pot over medium heat until warmed through, or microwave in a suitable dish.
