Hearty Beef Barley Soup

An incredibly nourishing and comforting beef barley soup, perfect for warming up on chilly days. This classic soup is brimming with tender beef, wholesome barley, and colorful vegetables, making it a nutritious and satisfying meal.

Ingredients

1 lb beef stew meat, cut into 1-inch cubes
2 tbsp vegetable oil
1 cup chopped onion
2 cloves garlic, minced
2 carrots, peeled and sliced
2 celery stalks, sliced
1 cup pearl barley
8 cups beef broth
1 can (14.5 oz) diced tomatoes
1 tsp dried thyme
1 bay leaf
Salt and pepper to taste

Instructions

1. In a large pot, heat the vegetable oil over medium-high heat.
2. Add the beef stew meat and cook until browned on all sides. Remove beef and set aside.
3. In the same pot, add chopped onion and garlic; sauté until onion is translucent.
4. Stir in carrots and celery, cooking for another 5 minutes.
5. Add the pearl barley, beef broth, diced tomatoes, dried thyme, bay leaf, and the browned beef back into the pot.
6. Bring to a boil, then reduce heat to low and simmer for 60-70 minutes, or until the barley is tender.
7. Season with salt and pepper to taste, then remove the bay leaf before serving.

Storage

Store leftover soup in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat soup gently on the stovetop over medium heat, stirring occasionally, until heated through.
