Hearty Beef and Vegetable Casserole

Ingredients
2 lbs ground beef
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 cup carrots, sliced
1 cup green beans, chopped
2 cups russet potatoes, cubed
1 can (15 oz) diced tomatoes
1 tbsp tomato paste
1 tsp dried thyme
1 tsp dried oregano
1/2 cup beef broth
Salt and pepper to taste
2 cups shredded cheddar cheese
Instructions
1. Preheat the oven to 350°F.
2. In a large skillet, brown the ground beef over medium heat, breaking it apart as it cooks.
3. Add the onion and garlic, sautéing until the onion is translucent.
4. Stir in the bell pepper, carrots, and green beans; cook for another 5 minutes.
5. Add the potatoes, diced tomatoes, tomato paste, thyme, oregano, and beef broth. Season with salt and pepper.
6. Bring the mixture to a simmer and cook for 10 minutes until slightly thickened.
7. Transfer the mixture to a casserole dish and top with shredded cheddar cheese.
8. Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden brown.
9. Let it cool for a few minutes before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 325°F for 15-20 minutes or until heated through.
