Hearty Beef and Barley Stew

A comforting and nourishing stew made with tender beef, wholesome barley, and fresh vegetables simmered slowly to perfection. Perfect for warming up on chilly days.

Ingredients

1 lb beef stew meat
1 cup pearl barley
4 cups beef broth
1 cup water
3 carrots, sliced
2 stalks celery, chopped
1 onion, diced
3 cloves garlic, minced
1 tsp thyme
1 bay leaf
Salt and pepper to taste

Instructions

1. In a skillet over medium heat, sear the beef until browned on all sides.
2. Transfer the beef to a slow cooker.
3. Add the pearl barley, beef broth, water, carrots, celery, onion, and garlic to the slow cooker.
4. Season with thyme, bay leaf, salt, and pepper.
5. Cover and cook on low for 6-8 hours or until the beef is tender and the barley is cooked.
6. Remove the bay leaf before serving and adjust seasoning if necessary.

Storage

Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.

Reheating

Reheat in a saucepan over medium heat until heated through, adding a splash of water or broth if needed to adjust consistency.
