Hearty Beef and Barley Soup

Ingredients

1 1/2 lbs beef stew meat
3 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
3 carrots, sliced
3 celery stalks, sliced
8 oz mushrooms, sliced
1 cup barley
8 cups beef broth
2 bay leaves
1 tbsp Worcestershire sauce
1 tsp salt
1 tsp black pepper
1/2 tsp dried thyme

Instructions

1. Heat olive oil in a large pot over medium-high heat. Add beef stew meat and brown on all sides, then remove and set aside.
2. In the same pot, add diced onion and garlic, sautéing until the onion is translucent.
3. Stir in carrots, celery, and mushrooms, cooking for an additional 5 minutes.
4. Return the beef to the pot, and add barley, beef broth, bay leaves, Worcestershire sauce, salt, pepper, and thyme.
5. Bring to a boil, then reduce heat to low and let simmer for 1 hour, or until barley is tender and beef is cooked through.
6. Remove bay leaves before serving.

Storage

Allow soup to cool completely, then store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stovetop over medium heat, stirring occasionally, until hot.
