Hearty Autumn Goulash

Ingredients
1.5 lbs beef chuck, cubed
2 tbsp olive oil
1 large yellow onion, diced
3 cloves garlic, minced
3 medium carrots, sliced
2 parsnips, sliced
2 cups beef broth
1 cup canned diced tomatoes
2 tbsp tomato paste
1 tbsp sweet paprika
1 tsp smoked paprika
1/2 tsp dried thyme
Salt and pepper to taste
2 bay leaves
1 red bell pepper, chopped
1 cup peas, fresh or frozen
Instructions
1. In a large pot, heat olive oil over medium-high heat and brown the beef cubes.
2. Remove beef and set aside. In the same pot, add onions and garlic, sauté until fragrant.
3. Add carrots and parsnips, cook for another 5 minutes.
4. Return the beef to the pot. Stir in beef broth, tomatoes, tomato paste, sweet and smoked paprika, thyme, salt, and pepper.
5. Add bay leaves, cover, and let simmer on low heat for 1.5 hours, stirring occasionally.
6. Add bell pepper and peas, cook for an additional 15 minutes.
7. Serve hot with crusty bread or over noodles.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stovetop over low heat or in the microwave until heated through.
