Harvest Spiced Pumpkin Cake

Ingredients

2 cups all-purpose flour
1 1/2 cups granulated sugar
1/2 cup packed brown sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon ground ginger
1/2 cup unsalted butter, softened
1 cup canned pumpkin puree
1/2 cup buttermilk
2 large eggs
1 teaspoon vanilla extract

Instructions

1. Preheat the oven to 350°F.
2. Grease and flour a 9x13 inch baking dish.
3. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
4. In another bowl, beat the butter, pumpkin puree, buttermilk, eggs, and vanilla extract until smooth.
5. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
6. Pour the batter into the prepared baking dish and spread evenly.
7. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
8. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Storage

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.

Reheating

To reheat, warm slices in the microwave for 15-20 seconds on medium power.
