Harvest Shepherd's Pie

Ingredients
1 lb ground turkey
1 cup diced carrots
1 cup diced parsnips
1 cup diced turnips
2 cups mashed sweet potatoes
1 cup frozen peas
1 cup diced onions
3 cloves garlic, minced
1 tbsp olive oil
1 tsp dried thyme
1 tsp dried rosemary
1/2 tsp ground nutmeg
1/2 tsp salt
1/2 tsp black pepper
1 cup chicken broth
2 tbsp all-purpose flour
1/2 cup grated cheddar cheese
1 tbsp Worcestershire sauce
Instructions
1. Preheat the oven to 375°F.
2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
3. Add ground turkey, cook until browned.
4. Add carrots, parsnips, and turnips, cook until slightly tender.
5. Stir in thyme, rosemary, nutmeg, salt, and pepper.
6. Sprinkle flour over the mixture, stir well to coat.
7. Pour in chicken broth and Worcestershire sauce, simmer until thickened.
8. Stir in frozen peas, remove from heat.
9. Transfer the mixture to a 9x13 inch baking dish.
10. Spread mashed sweet potatoes evenly over the top.
11. Sprinkle grated cheddar cheese over the sweet potatoes.
12. Bake in the preheated oven for 25-30 minutes until cheese is golden and bubbly.
13. Let cool for 10 minutes before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place a portion in a microwave-safe dish and heat on high for 2-3 minutes, or until warmed through. Alternatively, cover with foil and heat in a 350°F oven for 15-20 minutes.
