Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup canned pumpkin puree
1/2 cup chopped walnuts (optional)
1 cup powdered sugar
2 tablespoons unsalted butter, softened
1-2 tablespoons milk
1/2 teaspoon vanilla extract
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan.
2. In a medium bowl, whisk together the flour, baking powder, cinnamon, baking soda, salt, and nutmeg.
3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
4. Beat in the egg and vanilla extract until well combined.
5. Mix in the pumpkin puree until the batter is smooth.
6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
7. Fold in the chopped walnuts if using.
8. Spread the batter evenly into the prepared baking pan.
9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
10. Remove from oven and let cool completely on a wire rack.
11. For the frosting, beat the powdered sugar, softened butter, milk, and vanilla extract until smooth and creamy.
12. Spread the frosting over the cooled pumpkin bars before slicing into squares.
Storage
Store in an airtight container in the refrigerator for up to 5 days.
Reheating
To reheat, microwave individual bars for 10-15 seconds or let them come to room temperature naturally.
