Ingredients
1 9-inch pie crust
15 oz pumpkin puree
3/4 cup granulated sugar
1/2 cup packed brown sugar
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1/2 tsp salt
3 large eggs
1 cup evaporated milk
1/2 cup heavy cream
Instructions
1. Preheat oven to 425°F (220°C).
2. Roll out the pie crust and place it into a 9-inch pie dish.
3. In a large bowl, combine pumpkin puree, sugars, cinnamon, ginger, cloves, nutmeg, and salt.
4. Whisk in eggs until thoroughly incorporated.
5. Gradually stir in evaporated milk and heavy cream until smooth.
6. Pour filling into prepared pie crust.
7. Bake in preheated oven for 15 minutes.
8. Reduce oven temperature to 350°F (175°C) and continue baking for 40-50 minutes, or until a knife inserted near the center comes out clean.
9. Cool on a wire rack for at least 2 hours before serving.
Storage
Store leftover pie in the refrigerator, covered, for up to 4 days.
Reheating
Reheat individual slices in the microwave for 20-30 seconds, or warm the entire pie in a preheated oven at 300°F for 10-15 minutes.
