Grilled Honey Lime Chicken Skewers

Ingredients
1.5 lbs chicken breast
1/4 cup honey
1/4 cup fresh lime juice
2 tbsp soy sauce
1 tbsp olive oil
2 cloves garlic, minced
1 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
1/4 cup chopped fresh cilantro (for garnish)

Instructions
1. In a medium bowl, whisk together honey, lime juice, soy sauce, olive oil, minced garlic, cumin, salt, and pepper.
2. Cut the chicken breast into 1-inch cubes and place them in a large resealable bag.
3. Pour the marinade over the chicken, seal the bag, and massage to coat the chicken evenly. Refrigerate for at least 1 hour, or up to 4 hours for more flavor.
4. Preheat the grill to medium-high heat and lightly oil the grates.
5. Thread the marinated chicken pieces onto skewers, leaving a little space between each piece.
6. Grill the skewers for about 6-8 minutes per side, or until the chicken is cooked through and has nice grill marks.
7. Remove from the grill and let rest for a couple of minutes. Sprinkle with fresh cilantro and serve with lime wedges.
Storage
Store leftover skewers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat skewers on a grill over medium heat or in the oven at 350°F until warmed through, about 10 minutes.
