Grilled Fig and Prosciutto Pizza

Ingredients

1 lb pizza dough
2 tbsp olive oil
1 cup fresh figs, halved
4 oz prosciutto, thinly sliced
1 cup mozzarella cheese, shredded
1/4 cup goat cheese, crumbled
1/2 cup arugula
1 tsp balsamic glaze
1/4 cup cornmeal for dusting

Instructions

1. Preheat your grill to medium-high heat.
2. Roll out the pizza dough to a 12-inch circle on a lightly floured surface.
3. Brush one side of the dough with olive oil and sprinkle cornmeal on the other side.
4. Place the dough, oiled side down, on the grill and cook for 2-3 minutes until grill marks appear.
5. Flip the dough and quickly add mozzarella cheese, figs, and prosciutto.
6. Close the grill lid and cook for another 3-4 minutes until the cheese is melted and bubbly.
7. Remove the pizza from the grill and sprinkle with goat cheese and arugula.
8. Drizzle with balsamic glaze before slicing and serving.

Storage

Store leftover pizza in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat slices in a preheated oven at 350°F for 5-7 minutes or until warmed through.
