Grilled Chicken Salad

A delightful and nutritious salad featuring juicy grilled chicken, fresh mixed greens, vibrant cherry tomatoes, and creamy avocado slices, all lightly drizzled with olive oil and lemon juice for a refreshing taste.

Ingredients

2 boneless, skinless chicken breasts
1 tbsp olive oil
Salt and black pepper to taste
6 cups mixed greens
1 pint cherry tomatoes, halved
1 avocado, pitted, peeled, and sliced
2 tbsp olive oil (for dressing)
Juice of 1 lemon

Instructions

1. Preheat grill to medium-high heat.
2. Rub chicken breasts with olive oil, salt, and black pepper.
3. Grill chicken for 6-7 minutes on each side until cooked through.
4. Remove from grill and let rest for 5 minutes before slicing.
5. In a large bowl, combine mixed greens, cherry tomatoes, and avocado slices.
6. Add sliced grilled chicken to the salad.
7. Drizzle with 2 tbsp olive oil and lemon juice.
8. Toss gently to combine and serve immediately.

Storage

Store salad ingredients separately in airtight containers in the refrigerator for up to 2 days.

Reheating

Reheat chicken slices in a microwave for 1-2 minutes or until warm before adding to the salad.
