Great Chicken Salad

A delightful chicken salad perfect for a refreshing meal or a picnic, featuring tender chicken, crunchy celery, and a tangy dressing.

Ingredients

2 lbs chicken breasts
1 cup mayonnaise
1/4 cup sour cream
2 tbsp Dijon mustard
1 tbsp lemon juice
1 tsp salt
1/2 tsp black pepper
1 cup celery, diced
1/2 cup red onion, diced
1/2 cup almonds, slivered
1/4 cup fresh parsley, chopped
1/2 cup grapes, halved
1/4 cup dried cranberries

Instructions

1. Cook the chicken breasts in a pot of boiling water for 15-20 minutes until fully cooked. Allow to cool and then shred into bite-sized pieces.
2. In a large bowl, combine mayonnaise, sour cream, Dijon mustard, lemon juice, salt, and black pepper. Mix until smooth.
3. Add the shredded chicken, celery, red onion, almonds, parsley, grapes, and cranberries to the bowl. Toss until all ingredients are evenly coated with the dressing.
4. Chill the salad in the refrigerator for at least 30 minutes before serving to allow flavors to meld.

Storage

Store the chicken salad in an airtight container in the refrigerator for up to 3 days.

Reheating

For best results, serve the chicken salad cold. If you prefer it warm, gently reheat in a skillet over low heat, stirring constantly, until just warm.
