Grandma's Zucchini Loaf

Ingredients
1 cup granulated sugar
1/2 cup brown sugar
3/4 cup vegetable oil
3 large eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups grated zucchini
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
2. In a large mixing bowl, beat together the granulated sugar, brown sugar, and vegetable oil until well combined.
3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
4. In a separate bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt.
5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
6. Gently fold in the grated zucchini until evenly distributed.
7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
9. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Storage
Wrap the cooled loaf in plastic wrap and store at room temperature for up to 3 days or refrigerate for up to 1 week.
Reheating
Preheat oven to 300°F (150°C), slice the loaf, and warm for 5-10 minutes.
