Grandma's Roast Chicken
Grandma's Roast Chicken is a timeless family favorite, renowned for its simplicity and flavor. Ingredients
1 whole chicken (4 to 5 lbs)
2 tbsp olive oil
2 tsp salt
1 tsp black pepper
1 lemon, halved
4 cloves garlic, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 onion, quartered
2 carrots, cut into chunks
2 stalks celery, cut into chunks
Instructions
1. Preheat your oven to 425°F (220°C).
2. Pat the chicken dry with paper towels and place it in a roasting pan.
3. Rub the olive oil all over the chicken, then season generously with salt and black pepper.
4. Squeeze the lemon halves over the chicken and place them inside the cavity along with the minced garlic.
5. Sprinkle fresh rosemary and thyme over the chicken.
6. Arrange the onion, carrots, and celery around the chicken in the roasting pan.
7. Roast in the preheated oven for 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden and crispy.
8. Let the chicken rest for 10-15 minutes before carving and serving.
Storage
Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
Reheating
Preheat the oven to 350°F (175°C) and reheat the chicken for 15-20 minutes or until warmed through.
