Ingredients

1 cup granulated sugar
1 cup packed brown sugar
1 cup vegetable oil
4 large eggs
1 tsp vanilla extract
2 cups all-purpose flour
2 tsp baking powder
2 tsp ground cinnamon
1/2 tsp nutmeg
1/2 tsp ground ginger
1/2 tsp salt
3 cups grated carrots
1 cup chopped walnuts
1 cup raisins
1 cup crushed pineapple, drained
Frosting: 8 oz cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1 tsp vanilla extract

Instructions

1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a large bowl, beat together granulated sugar, brown sugar, and oil until well combined. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
3. In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, ginger, and salt. Gradually add dry ingredients to wet ingredients, mixing just until combined.
4. Fold in grated carrots, walnuts, raisins, and pineapple until evenly distributed.
5. Divide batter evenly between prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
6. Allow cakes to cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
7. For the frosting, beat cream cheese and butter together until smooth and creamy. Gradually add powdered sugar and vanilla extract, beating until fluffy.
8. Once cakes are completely cool, spread frosting between layers and over the top and sides of the cake.
9. Serve and enjoy your classic carrot cake!

Storage
