Ingredients
8 oz portobello mushrooms
4 oz brie cheese
4 slices sourdough bread
2 tbsp olive oil
1 tbsp balsamic vinegar
1 clove garlic, minced
Salt to taste
Pepper to taste
2 tbsp unsalted butter
Handful arugula
Instructions
1. Slice the portobello mushrooms.
2. Heat olive oil in a skillet over medium heat, add the garlic, and sauté until fragrant.
3. Add mushrooms to the skillet, season with salt and pepper, and cook until tender, about 5 minutes.
4. Stir in balsamic vinegar and cook for another 2 minutes. Remove from heat.
5. Spread butter on one side of each bread slice.
6. On the unbuttered side of two slices, layer the Brie cheese, cooked mushrooms, and arugula.
7. Top with the remaining bread slices, buttered side out.
8. Heat a clean skillet over medium heat and grill the sandwiches until golden brown on both sides and the cheese is melted, about 3-4 minutes per side.
Storage
Store the sandwich in an airtight container in the refrigerator for up to 2 days.
Reheating
Reheat in a skillet over medium heat until heated through and the bread is crispy.
