Gourmet Microwave Baked Potato

Ingredients
1 large russet potato
2 tbsp unsalted butter
3 tbsp shredded sharp cheddar cheese
2 tbsp sour cream
1 tbsp chopped fresh chives
Salt and pepper to taste
Instructions
1. Pierce the potato several times with a fork to allow steam to escape.
2. Place the potato on a microwave-safe plate and microwave on high for 5 minutes, then flip and microwave for another 3-5 minutes until easily pierced with a fork.
3. Carefully slice the potato open and fluff the inside with a fork.
4. Add butter, cheese, sour cream, and chives over the fluffy interior. Season with salt and pepper to taste. Serve immediately.
Storage
Store leftover potato in an airtight container in the refrigerator for up to 2 days.
Reheating
Reheat the potato by microwaving on medium power for 1-2 minutes until heated through.
