Gourmet Lemon-Basil Mayonnaise

Ingredients
1 large egg
1 tbsp Dijon mustard
1 tbsp white wine vinegar
1 cup olive oil
1 tsp lemon zest
1 tbsp fresh lemon juice
1/4 cup fresh basil leaves, finely chopped
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. In a medium bowl, whisk together the egg, Dijon mustard, and white wine vinegar until smooth.
2. Slowly add the olive oil a few drops at a time, whisking continuously until the mixture begins to thicken.
3. Once the mayonnaise starts to emulsify, continue adding the olive oil in a thin stream, whisking constantly.
4. Stir in the lemon zest, lemon juice, chopped basil, salt, and black pepper until well combined.
5. Taste and adjust seasoning as necessary.
Storage
Store the mayonnaise in an airtight container in the refrigerator for up to 1 week.
Reheating
For the best flavor, consume cold directly from the refrigerator; reheating is not recommended.
