Ingredients

Sourdough bread slices

Sharp cheddar cheese
4 oz, sliced
Brie cheese
4 oz, sliced
Unsalted butter
4 tbsp
Olive oil
1 tbsp
Yellow onion
1 large, thinly sliced
Salt
1/2 tsp
Black pepper
1/4 tsp
Fresh thyme leaves
1 tsp

Instructions

1. Heat olive oil in a skillet over medium heat.
2. Add sliced onions, salt, and pepper. Cook, stirring occasionally, until onions are caramelized, about 20 minutes. Stir in fresh thyme and set aside.
3. Butter one side of each bread slice.
4. On the unbuttered side, layer cheddar, brie, and caramelized onions.
5. Top with another slice of bread, buttered side up.
6. Heat a non-stick skillet over medium heat and place the sandwich in the skillet.
7. Grill for 3-4 minutes on each side until bread is golden brown and cheese has melted.
8. Remove from heat, slice, and serve immediately.

Storage

Store any leftover grilled cheese sandwiches in an airtight container in the refrigerator for up to 2 days.

Reheating

To reheat, place sandwiches in a preheated oven at 350°F for 10 minutes or until the cheese is melty and the bread is crisp.
