Golden Zucchini Spice Bread

Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 large eggs
1 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 1/2 cups grated zucchini (about 1 medium zucchini)
1/2 cup chopped walnuts (optional)
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
3. In a large bowl, beat the eggs, granulated sugar, and brown sugar until light and fluffy. Add the vegetable oil and vanilla extract, mixing well.
4. Gradually stir the dry ingredients into the wet mixture until just combined.
5. Gently fold in the grated zucchini and walnuts (if using) until evenly distributed.
6. Pour the batter into the prepared loaf pan and smooth the top.
7. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Storage
Store the zucchini bread in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
Reheating
To reheat, slice the zucchini bread and warm in a toaster oven or microwave until just heated through.
