Golden Squash Gratin

Ingredients
2 lbs butternut squash, peeled and sliced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
2 cloves garlic, minced
1 teaspoon fresh thyme, chopped
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons unsalted butter
Instructions
1. Preheat oven to 375°F (190°C).
2. In a large bowl, toss the sliced squash with salt, pepper, and garlic.
3. Butter a 9x13-inch baking dish and layer half of the squash slices evenly.
4. Pour half of the heavy cream over the squash and sprinkle with half of the Parmesan and mozzarella.
5. Add another layer of squash, then pour the remaining cream and sprinkle the rest of the cheeses on top.
6. Scatter fresh thyme over the top and cover with foil.
7. Bake for 30 minutes, remove foil, and bake for an additional 15 minutes until golden brown and bubbly.
8. Let sit for 10 minutes before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 350°F (175°C) for about 15 minutes or until warmed through.
