Golden Spiced Lentil Soup

A nourishing and warming golden spiced lentil soup that delights with a blend of turmeric and cumin, perfect for a healthy and comforting meal.

Serves: 6

Ingredients

1 tbsp olive oil
1 large onion, diced
2 cloves garlic, minced
1 inch ginger, grated
1 tsp ground turmeric
1 tsp ground cumin
1/2 tsp smoked paprika
2 cups carrots, diced
1 cup red lentils, rinsed
6 cups vegetable broth
1 can (14 oz) coconut milk
Salt and pepper to taste
Juice of 1 lemon
1/4 cup fresh cilantro, chopped

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and sauté until translucent, about 5 minutes.
3. Stir in garlic, ginger, turmeric, cumin, and smoked paprika and cook for 1 minute until fragrant.
4. Add diced carrots and cook for another 3 minutes, stirring occasionally.
5. Add rinsed lentils and vegetable broth, bring to a boil.
6. Reduce heat to low and let simmer for 20 minutes, until lentils are tender.
7. Stir in coconut milk, salt, and pepper, and simmer for another 5 minutes.
8. Add lemon juice and fresh cilantro, and serve warm.

Storage

Store in an airtight container in the refrigerator for up to 4 days.

Reheating

Reheat on the stovetop over medium heat, stirring occasionally, until heated through. Alternatively, microwave on high for 2-3 minutes, stirring halfway.
