Ingredients

2 lbs bone-in, skin-on chicken legs
1 1/2 cups pineapple juice
1 cup canned pineapple chunks
1/2 cup soy sauce
1/4 cup honey
1 tbsp apple cider vinegar
1 tbsp olive oil
2 cloves garlic, minced
1 inch ginger root, grated
1/2 tsp black pepper
1/4 cup fresh cilantro, chopped

Instructions

1. Preheat the oven to 375°F.
2. In a large bowl, combine pineapple juice, soy sauce, honey, apple cider vinegar, garlic, ginger, and black pepper to create the marinade.
3. Place chicken legs in a resealable bag and pour in the marinade. Seal and refrigerate for at least 1 hour, or overnight for best results.
4. Remove chicken from marinade and pat dry. Reserve marinade for later use.
5. Heat olive oil in a large oven-proof skillet over medium-high heat. Sear chicken legs on each side until golden brown, about 3 minutes per side.
6. Add pineapple chunks to the skillet, then pour reserved marinade over the chicken.
7. Transfer skillet to the preheated oven and bake for 30-35 minutes, or until chicken is fully cooked and glazed.
8. Garnish with fresh cilantro before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.
