Ingredients
1 cup sourdough starter

2 large eggs
2 tbsp sugar
2 tbsp melted butter
1 tsp baking soda

1. In a large bowl, mix the sourdough starter, all-purpose flour, and milk until well combined.
2. Let the mixture rest for 30 minutes to allow the sourdough to activate and bubbles to form.
3. Whisk in the eggs, sugar, melted butter, baking soda, and salt until smooth.
4. Heat a non-stick skillet or griddle over medium heat and lightly coat with butter.
5. Pour 1/4 cup of batter per pancake onto the skillet, cooking until bubbles form on the surface.
6. Flip the pancakes and cook for another 1-2 minutes until golden brown.
7. Serve warm with your choice of maple syrup, fresh berries, or a sprinkle of powdered sugar.
