Golden Corn Fritters

Ingredients

1 cup all-purpose flour
1/2 cup yellow cornmeal
1 tablespoon granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup whole milk
2 large eggs
2 tablespoons unsalted butter, melted
1 cup fresh or canned corn kernels
1/4 cup finely chopped scallions
Vegetable oil for frying

Instructions

1. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, and pepper.
2. In a separate bowl, beat the milk, eggs, and melted butter until well combined.
3. Pour the wet ingredients into the dry ingredients and mix until just combined.
4. Gently fold in the corn kernels and scallions.
5. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
6. Drop spoonfuls of batter into the hot oil, flattening slightly with the back of the spoon.
7. Cook the fritters for 2-3 minutes on each side, until golden brown and crisp.
8. Remove from the skillet and drain on paper towels.
9. Serve warm with your choice of dipping sauce.

Storage

Store leftover fritters in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, warm the fritters in a 350°F oven for about 10 minutes or until heated through.
