Golden Cheddar Corn Casserole

Ingredients
2 cups frozen corn
1 cup shredded sharp cheddar cheese
1/2 cup sour cream
1/4 cup cream cheese, softened
1/4 cup milk
2 tablespoons unsalted butter
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 cup chopped green onions
1/4 cup panko breadcrumbs
Instructions
1. Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking dish.
2. In a medium saucepan, melt the butter over medium heat; whisk in the flour until smooth.
3. Gradually add the milk, stirring constantly until the mixture thickens.
4. Stir in the cream cheese and sour cream until well combined.
5. Add in the salt, black pepper, garlic powder, and onion powder.
6. Fold in the corn and half of the cheddar cheese.
7. Pour the mixture into the prepared baking dish and spread evenly.
8. Top with the remaining cheddar cheese, panko breadcrumbs, and green onions.
9. Bake for 25-30 minutes, or until the top is golden and bubbly.
10. Let it cool slightly before serving.
Storage
Store the casserole in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 300°F (150°C) for 10-15 minutes until heated through.
