Golden Celebration Cake

Ingredients

3 cups all-purpose flour
2 cups granulated sugar
1 cup unsalted butter, softened
1 cup milk
4 large eggs
2 tsp baking powder
1 tsp vanilla extract
1/2 tsp salt
3 cups powdered sugar
2 cups unsalted butter, softened (for frosting)
2 tbsp heavy cream
Edible gold leaf (for decoration)

Instructions

1. Preheat your oven to 350°F (175°C) and grease three 9-inch round cake pans.
2. In a large bowl, cream 1 cup of butter with granulated sugar until light and fluffy. Add eggs, one at a time, beating well after each addition.
3. Sift together flour, baking powder, and salt. Gradually add to the creamed mixture alternately with milk, beginning and ending with the flour mixture. Stir in vanilla extract.
4. Divide the batter evenly among the prepared pans and smooth the tops.
5. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
6. For the frosting, beat 2 cups of softened butter until creamy. Gradually add powdered sugar, beating until smooth. Add heavy cream and beat for another minute until fluffy.
7. Once the cakes are cool, place one layer on a serving platter. Spread a layer of frosting over the top. Repeat with the second and third layers, covering the top and sides of the cake with the remaining frosting.
8. Carefully apply the edible gold leaf to the top of the cake for a luxurious finish.

Storage

Store the cake covered in the refrigerator for up to 5 days.

Reheating

Allow the cake to come to room temperature before serving; no reheating necessary.
