Glazed Almond Cookies

Ingredients

1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
2 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1/2 cup finely chopped almonds
1 cup powdered sugar
2 tbsp milk
1/2 tsp almond extract

Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
3. Beat in the egg and vanilla extract until well combined.
4. In another bowl, whisk together the flour, baking powder, and salt.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Fold in the chopped almonds.
7. Roll tablespoon-sized portions of dough into balls and place them on the prepared baking sheet.
8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
9. While the cookies are cooling, prepare the glaze by mixing powdered sugar, milk, and almond extract in a small bowl until smooth.
10. Drizzle the glaze over the cooled cookies and allow to set before serving.

Storage

Store in an airtight container at room temperature for up to 1 week.
