Gingerbread Spiced Apple Cake

Ingredients

1 cup unsalted butter, softened
1 1/2 cups granulated sugar
3 large eggs
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp ground nutmeg
2 medium apples, peeled and chopped
1 cup chopped walnuts (optional)
1/2 cup molasses
1/2 cup buttermilk
For the frosting: 8 oz cream cheese, softened
1/4 cup unsalted butter, softened
3 cups powdered sugar
1 tsp vanilla extract

Instructions

1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan.
2. In a bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
3. In another bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg.
4. Gradually add the dry ingredients to the creamed mixture, alternating with molasses and buttermilk. Mix until just combined.
5. Fold in the chopped apples and walnuts.
6. Pour the batter into the prepared baking pan and spread evenly.
7. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
9. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until creamy.
10. Once the cake is completely cooled, spread the frosting evenly over the top.
11. Slice and serve with a hot cup of cider.

Storage

Store the cake in an airtight container in the refrigerator for up to 5 days.

Reheating

To reheat, allow the cake slice to come to room temperature or warm in a microwave for 10-15 seconds.
