Gingerbread Muffins

Ingredients

1 3/4 cups all-purpose flour
1/2 cup brown sugar
1/2 cup molasses
1/2 cup unsalted butter, melted
3/4 cup buttermilk
1 large egg
1 tsp baking soda
1 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp salt
1/2 tsp vanilla extract

Instructions

1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
2. In a large bowl, whisk together the flour, brown sugar, ginger, cinnamon, cloves, and salt.
3. In another bowl, combine the melted butter, molasses, buttermilk, egg, and vanilla extract.
4. Add the wet ingredients to the dry ingredients and stir until just combined.
5. Divide the batter evenly among the prepared muffin cups.
6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
7. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Storage

Store the muffins in an airtight container at room temperature for up to 3 days.

Reheating

Reheat in the microwave for 15-20 seconds or in a preheated oven at 300°F (150°C) for 5-7 minutes.
